I’ve discovered that homemade marshmallows vs. store bought marshmallows are a whole different animal. They’re so soft. Like seriously soft. Soft enough to wish I could make it into a pillow, because I’m pretty confident that it would produce the greatest sleep. Ever.
It sounds intimidating to make though right? Honestly, it’s one of the simplest things. If you know how to boil water and mix standard ingredients, this recipe is your friend. And the best part is that there’s no corn syrup. The beautiful minds over at Attainable Sustainable shared this amazing recipe that uses honey in place of corn syrup. Not only is it healthier for you, but the taste is incredible.
To help prove that it’s super duper easy, I made a video with some tips and tricks to help walk you through it.
How To Make No-Corn Syrup Marshmallows- *Video & Recipe*

- Gelatin Mixture
1 Tablespoon powered gelatin
1/4 cup water
- Hot Mixture
1 cup sugar
3/4 cup water
1 Tablespoon Honey
1/2 tsp vanilla (or a splash or two. I don’t really measure)
a pinch of salt
Powdered Sugar for coating
Directions
- Add the gelatin and 1/4 cup water into your stand mixer with a whisk attachment. Mix to combine. Let is sit for at least 5 minutes.
- Add 3/4 cup water, sugar, honey, vanilla, and salt into a medium size pot and cook on high/med high heat. Stir together until the sugar has melted with a heat resistant spatula/spool. No need to stir after that. Bring to a boil. Using a candy thermometer, cook until the temperature of the mixture is 238˚F (soft ball stage). Remove from heat.
- Immediately, take the hot mixture over the to gelatin/water mixture. With the mixer on low, slowly add the hot mixture. Once it’s fully added, increase speed to medium/high. Let it mix for about 8-10 minutes. Keep an eye on it though. We want the mixture to be warm, malleable, and scrapeable, while being white and stretchy.
- Prepare a 8×8 pan with parchment paper/wax paper. (For parchment paper I spray it lightly with cooking spray.) You could also do this freeform on a piece of parchment paper/wax paper. The corners just won’t be squared off.
- Once the mixture is ready, spray your rubber spatula with cooking spray and scrape down the sides of the wall, and plop your marshmallow mixture onto the prepared sheet. Let it sit for 2-3 hours or until set. (It can be cut sooner if needed, it just might be a bit softer.)
- Take the parchment paper out of the pan (if you had one), and set it on the counter. Spray a chef’s knife (or just a big sharp knife) with cooking spray to help with stickage. Sprinkle the top of the marshmallow with powdered sugar. Put a little powdered sugar into a bowl as well. Cut the marshmallows into desired size squares, and toss them in the bowl of pow. sugar. Store in a airtight bag.
